White Mountain Hand-Churned Batch
3 cups Half & Half
3 cups Heavy Cream
4 ½ Tablespoons Vanilla (or 2 Tablespoons Mexican Vanilla)
1 ½ Heaping Cups Sugar
1/8 Teaspoon Salt
Mix early & chill. Chilling the canister also helps when churning on hot days. Layer ice and salt in an ice cream freezer and hand churn medium slowly until the mixture stiffens and then churn quick tempo until complete – about 25 minutes total. Taste but then chill in your freezer for almost a day to allow the ice cream to ripen for best results. Enjoy! Lulu
Extra Large Batch
4 cups Half & Half
4 cups Heavy Cream
6 Tablespoons Vanilla (or 3Tablespoons Mexican Vanilla)
2 Heaping Cups Sugar
1/4 Teaspoon Salt
2 cups Half & Half
2 cups Heavy Cream
3 Tablespoons Vanilla (or 1.5 Mexican Tablespoons Vanilla)
1 Heaping Cup Sugar
1/8 Teaspoon Salt
1.5 cups Half & Half
1.5 cups Heavy Cream
2 Tablespoons Vanilla (or 1 Tablespoons Mexican Vanilla)
¾ Heaping Cup Sugar
1/8 Tsp Salt, scant
* For Countertop Freezer ice cream, chill the container in your freezer at least 24 hours. Then super chill your mix for 20 minutes in the freezer right before churning so it is super cold. Churn 20 minutes then fold into a chilled plastic container and ripen. (Plastic will not transfer heat.) Yum!
Saeko’s Minty Cookies & Cream Variation
The first time Saeko visited Trimble Creek Lodge (before she was our son Tony’s wife), Tony asked us to make a chocolate mint ice cream for her – her absolute favorite. After many experiments – we came up with this version and now this is what we often now serve to our guests at Trimble Creek Lodge and of course to Saeko when she comes to visit!
½ Batch TCL Creamy Vanilla Ice Cream
A few drops green food coloring (optional)
5-10 ounces (1/2 package – a whole package) frozen fudge mint cookies (like Keebler Grasshoppers or Girl Scout Chocolate Mint Cookies). Put the cookies in a plastic bag and crush them with a rolling pin or kitchen mallet. Leave some pieces larger and others small.
After churning and before ripening ice cream, divide your batch in half. Put one half in the freezer to enjoy as TCL Vanilla. Add the food coloring if you are using it. Quickly fold in your desired amount of cookies and then ripen in your freezer for a day before enjoying.
